6 Picks in June: Teriyaki Chicken & Fried Rice

For the month of June I have decided to pick 6 recipes to share throughout the month. These recipes will be easy, delicious and healthy with 6 ingredients or less! (seasonings don't count) I encourage you to make a meal at home using 6 ingredients or less. Please share with us your recipe/experience on our Facebook page or by commenting below!

Here is a sneak peak at the 1st Pick in June!

I wanted to make something new for dinner. This recipe needed to be easy, contain ingredients I already had on hand and taste delicious. Don't worry I found a winner!! Teriyaki Chicken and Fried Rice. My husband loves teriyaki chicken so I needed something to go with it. Making homemade fried rice always seemed like a bad idea because I was afraid it wouldn't taste the same as restaurants. Today I overcame my silly fear and tried it.... Best Decision Ever! So here's what I did:

                                                                                                                                                      INGREDIENTS:

Add garlic to the pan with a little bit of oil.

Then add about 2 cups of any veggies you like. I like carrots, peas, green beans, corn etc. Put in the veggies you like!

Saute veggies for about 2-3 min then push the veggies to one side of the pan and move the pan slightly off the burner so the veggies don't continue to cook (picture is shown below).

Scramble one egg on the other side of the pan as shown in the picture. Once egg is cooked combine veggies and egg. Add in 2 cups of cooked rice. Mix!

Add 1/4 cup of soy sauce. If you need to add more that is fine but just be mindful of how much you put in.

Its time to add the seasonings. Ginger is so yummy and makes a huge difference in the flavor! I have found that whenever I use soy sauce I use ginger as well. These two ingredients go well together. For the seasonings I sprinkled a little of each until you get the desired flavor you want.

Here is a picture of the chicken! I marinated the chicken tenders in a simple teriyaki marinade for 24 hours. Placed in the oven for 30 min on 375.

Add some strawberries (fruit) and milk (dairy) to your meal....dinner is served! Enjoy :)

2nd Pick in June.... Coming June 6th!
