Cranberry Orange Oat Muffins

I love this healthier muffin recipe. It is just the right amount of sweet but not over bearing and makes a great breakfast or snack. Also click here to find tips on how to Create a Quick Bread of your very own!


1 1/2 cups quick oats
1 cup whole wheat flour
1/2 cup sugar
1 Tablespoon baking powder
1/4 teaspoon salt
1/2 cup orange juice
1/2 cup non-fat lemon Greek yogurt
 (you can also use plain Greek yogurt)
1 large egg
1/4 cup canola oil
1 Tablespoon orange zest
1/3 cup dried cranberries


1/4 cup oats
3 Tablespoons chopped pecans
2 Tablespoons brown sugar
1 Tablespoon melted butter


Preheat oven to 400 degree F. Mix dry ingredients together, in a separate bowl combine wet ingredients. Mix together. Mix topping ingredients together and set aside. Coat muffin pan with cooking spray (I used Baker's Joy, it has flour already in the spray!) Spoon mix into muffin pan, and sprinkle topping. Bake for 18-24 minutes or until an inserted toothpick comes clean. Allow to cool for a few minutes and enjoy! Yields about 12-16 muffins.
