Soup-Fest: Day 4

Today's featured soup is chock full of nutritious foods such as spinach, beans, and couscous. It has a unique blend of flavors, including leek, garlic and mint. Recipes such as this one are one good reason I keep a mint plant growing in my window sill. I love fresh mint! (You can also used dried.) To make this recipe vegetarian, simply use vegetable instead of chicken broth. Try White Bean Soup w/Spinach, Leeks and Couscous today!
