Spring/Summer Holiday Party Kit!

What's Hot and Spicy and Oh so Nice-y?! BBQ!! It's BBQ time, baby! It's a great time of year! There are so many fun things to do and it feels great to break free of the indoors and have some fun in nice weather. Perhaps you'll take a dip in the pool or spend the weekend at the lake? Or we might see you engaged in a nice afternoon game of croquet or badminton? Whatever it is, we hope you'll enjoy the holidays safely and with those you love.

Here is a collection of recipes to help you make enjoying the holiday simple, healthy, and delicious!

The Appetizers
A party just wouldn't be a party without a table full of munchies nearby! This Avocado Salsa tastes great with tortilla chips and is sure to please! It's chock full of healthy fats (in the avocado) as well as flavor that will put a smile on your face, as well as in your belly!

Cottage Cheese Dip is the perfect addition to your veggie tray! Using low-fat cottage cheese and plenty of seasonings, this makes a great low-calorie addition to your favorite vegetables with a taste you'll love.

And since we can never run out of good reasons to keep munching on veggies, here's a Hummus recipe that will knock your socks off! Having a nice variety of options for appetizers is sure to keep your guests happy and entertained while you get the grill going. Speaking of the grill....

The Meat
Want to try something a bit different this year? These Succulent Yogurt Marinated Chicken Kebabs are a tasty way to cut down on the saturated fat and cholesterol at your holiday party. Break away from the typical party foods and not only will your guests have a memorable experience, but so will their tastebuds!

The Side Dishes

The Spring and Summer months are a great time to enjoy seasonal vegetables! These Grilled Vegetable Packets are easy to prepare and you control the flavor! Using herbs and spices, or even Italian dressing is a great way to bring the flavor while steering clear of adding more fats to the meal. Make it even more fun by playing with the color combination in the vegetables you choose. Speaking of color....

Carribean Sunset Fruit Salad is a delight not only to the eyes but to the tastebuds. Talk about tasting the rainbow! Your food table has never looked so good!

This brings us to the pasta salad. Want to try something a little bit different? Perhaps you have some guests who are going meatless? Well, Bulgur Chickpea Salad is for you! Flavored with soy sauce, and packed full of whole grains, fruits and vegetables, you can indulge in holiday food while still getting healthy servings from many of the food groups!

The Dessert

Ahhh....the dessert. It is a favorite part of any meal. This is a great time of year to try those seasonal fruits that we love! Rhubarb-Strawberry Parfaits are the perfect combination of flavor, sweetness, delight, all while being low-calorie! In the words of Charlie Swan, "Sometimes you've got to learn to love what's good for ya." My friends, these fruity treats make loving whats good easy to do!

Delicious, Informative, and Free! What could be better?

The above photo collage was created from a recent class we did, partnering with the USU Extension in Provo, UT. The theme of the class was "Top Ten Meals Under $10". Now, I ask you - Who wouldn't want to learn to get delicious home cooked meals for under $2.50 per person? That's what we thought. ;-) In this class, we learned about how menu planning can make all the difference and that not only can you eat well on a budget, but you can enjoy a variety of foods while you're at it.

At our free public classes, we always do a cooking demonstration of a delicious and affordable recipe and share samples with all who attend. Plus we give oodles of nutritional information along with a copy of the recipe so you can make it yourself at home!

Join us on May 10th from Noon to 1pm at the USU Extension Office Room L700 for a FREE class on baking and measuring with Rhubarb.
