It's asparagus season! What is your favorite way to enjoy asparagus? We love it roasted, steamed, or even in a soup! Asparagus makes a great addition to a salad, couscous dish, or egg dishes such as an omelette or frittata.

Asparagus is not only delicious to the taste, but it is also packed full of disease-fighting power! Glutathione is something that our bodies crave to fight disease and asparagus is a great source of it! Asparagus is most affordable from April to June, so scurry over to the produce section and pick up some green stems! Be sure to use them as soon as possible, as asparagus are best used the day that you bring them home. Curious about how much of the asparagus is best to eat? Hold the top half of a spear in one hand and the bottom part with your thumb and forefinger and bend until it snaps! It will naturally break where the toughest part meets the tender part.

Everything's Coming Up Roasted!!

Spring is in the air and to me that means it's time for spring vegetables! There are so many delicious options, but two of my favorites are artichokes and asparagus. I surveyed a group of adults from around the country, who said that some of their favorite springtime foods are:

Fruit, Salad, Strawberries, Pasta Salad, Ice Cream, Watermelon, BBQ Food, Butter Grilled Asparagus, Corn on the Cob, and Strawberry Shortcake. Yum! Is your mouth watering yet? Mine sure is. One thing I noticed is that people especially like roasted foods during the Spring and Summer months. Roasted foods are very flavorful and often colorful as well! So, I thought I would share three roasted recipes with you, including some that incorporate Spring vegetables. Enjoy!
Chili-Roasted Chick Peas look and taste delicious! When is the last time you used chick peas in your cooking? It's never too late to start! Spring is a great time for new beginnings!
Roasted Herbed Artichokes with Leeks will dazzle you! This recipe uses fresh herbs to add plenty of flavor to an already mouth-watering vegetable. But, did you know that artichokes are actually flower buds?
Sometimes, simpler IS better! Such is the case with this Roasted Asparagus recipe. And if you're looking for something a bit more complicated, try dressing it up with a bit of lemon juice and parmesan cheese!
