Cooking with Cabbage!

Eating cabbage is a fantastic way to bring more Vitamin K into your diet. You may have tasted it in Sauerkraut or Cole Slaw, and cabbage is a delicious addition to many other recipes as well.
Cabbage Roll Casserole (pictured above) is a healthy and tasty way to enjoy cabbage in a meal. The great thing about this recipe is that it can be made all in the same skillet (aside from preparing the rice). This means less clean up and work in the kitchen! It's also low calorie! It can be made to be a more spicy dish or more mild (by excluding the crushed red pepper from the recipe). The recipe uses a half head of cabbage, so you may wish to keep the other half for a delicious snack: Simply sprinkle it with lemon juice for a low-calorie vitamin packed munchie. Cabbage also makes a nice addition to soups and salads. For more ideas on how to cook with cabbage, join us at the Orem Public Library tonight (March 30th) from 7 to 8pm. We'll be tasting a Chicken Broccoli Stir Fry (made with cabbage) and learning about both cabbage and legumes.

CABBAGE TIPS
When selecting a head of cabbage, look for it to be tightly closed, bright in color, and without any browning. Cabbage can be eaten cooked or raw. However, you won't want to cook it too long! If you let it get mushy, it will likely lose much of it's delicious flavor.
